Let's Do Brunch!


~Happy Cinco de Mayo!~

To celebrate this Mexican holiday we're cookin up a south of the border favorite......
Chilaquiles
(eggs w/ corn tortillas)

You can make these plain (just eggs and tortillas) or fancy em up a bit with some added yummy ingredients.
Here's what you'll need for the the version I like best


6 corn tortillas torn into pieces
6 eggs
shredded muenster cheese
chopped tomato
chopped fresh cilantro
avocado slices
salsa
chopped jalepeno

Heat oil (about 1/3 cup) in a large skillet, then add your tortillas and sprinkle w/ salt. Cook til nice and golden brown. Discard remaining oil, then return pan to burner, add the eggs and scramble them gently. You can add some salsa at this time if you like your food spicy.


After the eggs are cooked through, sprinkle w/ cheese, and turn off the burner. Cover the pan and let set a few minutes until the cheese melts.

Now you are ready to serve em up, and garnish with your favorite toppings, such as chopped tomato, cilantro, jalapeno , salsa, or avocado. You may even want a splash of sour cream!
