Santa Fe Soup - Super easy, Super Yummy!

This is such an easy recipe to throw together. It's great any time of the year, but especially great on a chilly day, since it's hot and hearty.

Santa Fe Soup
1 lb Ground Beef
1 med onion chopped
2 cans pinto beans
1 can kidney beans
1 can whole kernel corn
2 cans Rotel tomatoes w/chilies
1 pkg taco seasoning
1 pkg. Hidden Valley Ranch dressing Mix
tortilla chips, sour cream, shredded cheddar cheese

Brown ground beef and onion, drain. Add entire cans of beans, corn, and Rotel tomatoes. Stir to mix, and add packets of taco seasoning and ranch dressing mix. Simmer on low 2-3 hours, or in a crock pot on low for 3-4 hours. Serve topped with crushed tortilla chips, shredded cheddar & sour cream.

This is also good with cornbread. Yeah, I know, what isn't. Sometimes I'll throw a drained can of chopped green chillies and a handful of shredded cheese into my regular cornbread mix for a little Southwest flavor.

By the way, you probably already knew this, but a little birdie named Cookie told me that this is known as Taco Soup in the Weight Watchers world. 1 cup = 2 points.
