(Finnish Baked Pancake)

Pronounced krup'soo with a rolled "r."
Makes 2 to 3 servings

This is one of our favorite family recipes for a Finnish Baked Pancake. It's easy to make and contains basic ingredients that you probably already have on hand. It's perfect for a festive brunch at Easter or Christmas time, or a nice treat any Saturday or Sunday morning.

3 Tablespoons butter or margarine
2 to 3 eggs (more egg gives it more custard-like consistency)
1 1/2 tablespoons sugar
1/2 teaspoon salt
1 cup milk (whole, low-fat or skim)
1/2 cup flour

For Serving:

Syrup, crushed strawberries, crushed raspberries, blueberry pie filling, or create your own topping of your favorite fresh fruit

Note: To make 4 to 6 servings, double the recipe and use a 9 X 13 inch cast-iron or glass pan.

1. Preheat oven to 400 degrees F. Place the butter or margarine in a heavy 9- to 10-inch cast iron skilled or heavy glass pan (lightweight pans will burn the bottom of pancake) in the oven until butter is melted.

2. In a mixing bowl, beat the eggs. Stir in the sugar and salt. Add the milk alternately with the flour, mixing well after each addition.

3. Pour the batter into the hot butter in the pan. Bake for 20 minutes.

4. Cut into wedges and serve with your choice of toppings.
